Chef Bruce Rennie wows Penzance diners with his bluefin tuna cooked four ways!


This was the menu posted online and outside the Shore in Penzance...

that saw a queue of people stretched along the street to the restaurant door...


then in...

and up to the reception desk...


and this was what they were queueing for - every dish was absolutely mouthwatering and the steaks of tuna the most tender thing on the planet...


all cooked on a Japanese charcoal grill...

sat down after being some of the first in the queue, skipper and crew from the boat that caught fish just over a week ago...


amongst the many eager to see how the legendary Bruce's aged, cured, steamed, seared and grilled tuna was going to taste!

The result - a truly mouthwateringly memorable set of dishes - each one a stunning example of the wizard chefery that has the Shore as the Penzance restaurant with the highest Trip Advisor rating! Kudos to Mr Rennie!

Fish of the day - week 6 - the beautiful Ballan wrasse.

 


Another one of those fish landed looking like it came straight from the sea! The Ballan wrasse is another one of the the wrasse family that the inshore guys pick up in their gear.  A fish for the more adventurous chef - or if you really want to make the most of its delicate flesh then go properly oriental, sharpen up that filleting knife and slice the fillets as thinly as you can for any number of sashimi dishes - or try a ballan ceviche dish.


Alternatively, wrasse make an excellent addition to many fish stew type recipes - its the quantity of bones that do it - so here is one of several variations on that theme...

Hunting herring on an industrial scale - sustainability is the key.

France Pelagique have been posting from their fleet of freeze trawlers during the start of this season's herring fishery in the North Sea and Channel.


Another herring fishing report, this time from the freezer trawler, Africa. 

"Not only in June but also in December we fish for herring every year. The herring swims in large schools through the North Sea to the south to the Channel. Our trawlers catch the herring there and freeze it on board for the African and Asian market. The crew of the SCH-24 Africa tells more about the coming days and shows the fishing on board."


At the same time, Patrice Noel, chief engineer of the Scombrus made his last trip. Here is a testimonial to him and his life at sea aboard these large ships.

"On November 27th, the chief engineer of the Scombrus, Patrice Noël, left us for his last trip. All the teams of France Pélagique wanted to pay tribute to him through this podcast. Because Patrice had this will pegged to his body: to learn, always and again; transmit, again and again. This tribute is above all a testimony. Testimony of a fisherman on his life as a sailor and his relationship to the sea, the ships or the crews with whom he worked. 

Testimony also for the younger generations, in order to share with them the singularity of the fishing professions, rich in discoveries and apprenticeships. Testimony of a commitment to a job well done, with passion but always with humility. It is now up to us to perpetuate what Patrice has brought us so much, humanly and professionally, in a perpetual quest for innovation and improvement of the existing. On land and at sea, we will try to keep his memory alive. Thank you Patrice.

Fishing not far from the Scombrus, the Africa is a member of the the Pelagic Freezer-Trawler Association (PFA) whose members fish high-quality December herring in the Channel alongside the Africa.

The PFA, whose members include some of the largest fishing companies in the world including Parlevliet & Van der Plas Group and the Cornelis Vrolijk fishing companies in the Netherlands own the largest factory ships fishing in European waters. See the full list of participating vessels below.

PFA members specialise in fishing pelagic fish such as herring, (horse) mackerel and blue whiting. These pelagic species constitute a huge biomass and the shoals of fish can be as big as the island of Malta.

the fishing daily advertise with us The PFA says that many independent studies have given evidence that the carbon footprint of pelagic fisheries is the lowest of all forms of animal protein production.

They say:

“Because pelagic fish migrate through the water column (away from the seabed) in huge, homogeneous shoals, vessels from PFA members can fish very selectively, using high-tech equipment such as sonar. As a result, by-catch levels are no more than around 1%.

“Pelagic freezer-trawlers of PFA members are larger than most other pelagic trawlers and are almost unique for our processing and freezing space onboard, which makes up around 70% of the vessel’s size. This allows for longer fishing trips and less fuel consumption from returning to port.

“In pelagic fishing, it is an economic necessity to apply economies of scale due to the very large volumes of fish involved and tough international competition in the seafood market. As always, PFA members are committed to fishing these large volumes within the applicable quota, which are based on a very solid scientific basis.”

Pelagic fish are seasonally abundant in specific areas. Therefore, specific species are better fished on specific fishing grounds and in specific months of the year. December is the season for the MSC-certified North Sea herring’s population in the English Channel. Its quality is now optimal.

Herring is very healthy because it contains high-quality proteins, vitamins and minerals, along with high levels of omega-3 fatty acids that are an essential part of a healthy diet. In addition, this herring from PFA members is very affordable. Around 90 percent of all our fish is destined for markets outside Europe, especially African countries where food security is not always certain.

Several freezer-trawlers from PFA members will be fishing in the English Channel these weeks and they have moved to dispel the public’s concern over them saying that despite some claims that large vessels or “supertrawlers” are less sustainable than smaller vessels, they like to continue to tell the factual story about their vessels:

Not the size of the vessel, but scientifically derived quotas determine how much freezer-trawlers can fish. Our fishing operations are within the allocated quotas. Pelagic fishing is not in competition with small scale fishers. It’s only a different speciality which focuses on almost entirely different stocks, different fishing grounds and different markets.”

News from the Breton fleet: Fishing: boats stopped.

 


Fishermen decide to stop their activity because of Brexit and the increase in fuel prices. The future of the sector is in question. Fishermen are forced to stop their activity because their boats are no longer profitable. In question, the cost of maintenance as well as the high prices of fuel. To respond to these issues, the president of the "Hent ar Bugale" shipping company had to resign himself to placing a boat on the individual support plan, which looks like a breakage plan. “We are in a financial stalemate ,” says Serge Guyot.

Significant help requested Despite a potential aid of 500,000 euros for each boat, this could have serious consequences. “We have an obligation not to reinvest for five years but if we get out of the boats we shoot ourselves in the foot”, deplores Serge Guyot. 63 Breton ships could completely stop their activity. In total, the Breton region wants aid of up to 51 million euros. The state's response should come in late December or early January.

Prins Bernhard - Day 15 - homeward bound.

Photographer Thomas Troadec has nearly completed his assignment for France Pélagique aboard the freezer trawler, Prins Bernhard. He was commissioned by the company to record in photographs and video the vessel's first herring season trip fishing in the busiest shipping lane in the world, the English Channel, La Manche in French. Vessels like the Prins Bernhard have come in for a great deal of what they would consider is bad press from NGOs and the media. This was an opportunity for the company that operates this fleet of huge pelagic vessels to illustrate their side of the story.

 




“On the way back, the sailors on deck clean the trawl by hand. The working scene provides a framework for making a series of portraits. We set up a few lights and the sailors came to be photographed."

Band of Brothers - Jolly Roger launch event at the Red Lion, December 13th.


 

Jolly Roger are set to release their newest single ‘Band of Brothers’ on December 9th at the Red Lion in Newlyn.

The song is a story of loss in the fishing community and was written by Dorian Arnold. It describes the heartbreak of people not returning from sea and tells the tale of those left behind with delicate acoustic guitar moving to an emotive and powerful electric guitar solo. There is a strong connection between those involved in the production of the song and the loss of the Margaretha Maria in 1998.

Songwriter, Dorian Arnold holds the subject matter very close to her heart, she says: 

"Throughout the '90s, I dated a Newlyn man, an ex fisherman, and I spent a lot of time with the close-knit fishing community there. The loss of the Margaretha Maria with all four of it's crew haunts me still, and I am reminded of those sad days every time I hear a news report of another missing boat somewhere off the shores of the UK. Those lost boats, their crews, the grieving families & friends are what inspired me to write this song.’

 



The music video features Jolon Williams, who’s father was one of the lives lost on the Margaretha Maria and will be released alongside the single. JollyRoger are working with the Fishermen’s Mission to donate all physical and digital download sales to their cause of supporting fishing communities throughout the uk.
