Heat and gut your fresh sardines......
wash and leave to drain......
prepare a crock of sea water (if you can get it) with a chopped onion and a handful of small tatties - - these local ones came from Helston courtesy of Lovells greengrocers in Newlyn.......
carefully lift the fish out whole......
